Welcome to Country Girl Cookin 🙂 I’m so glad you stopped by. My name is Rachel and I was born and raised in the country. Ever since I was a little girl, I’ve enjoyed being in the kitchen. I follow the Trim Healthy Mama eating plan and I love sharing this lifestyle with anyone who will listen 🙂 My intention for starting this blog was to share some of my favorite THM-friendly recipes with you. Along the way I may share a little about my everyday life as well.
I have been happily married for over 10 yrs to a wonderful man and we have 3 little boys who love to taste-test all my new recipes. We live on a Bible college campus and our main focus of ministry is young people. We have the privilege of traveling for our college with singing groups. I have been traveling for over 15 years and I love going to new places and meeting new people. It’s definitely more challenging to eat 100% on-plan while I am out and about, but I always try to do my best. So you may hear about those days when I travel and can’t always be in my kitchen (my favorite place in the house)!!
If I had a maid for the rest of my house, I would gladly stay in my kitchen all day cooking and baking! 🙂
