All the ingredients are mixed in one bowl then put in a muffin tin…that’s what I call quick supper preparation!
Growing up my mom made meatloaf quite a bit. I loved it because it was simple! There were no crazy ingredients mixed up with the ground beef. I realize that alot of people do indeed love their meatloaf piled with chunks of onions and pepper and possibly other ingredients, but that was not me! It was the basic ingredients that made mom’s meatloaf taste so delicious! I still remember her setting the small roasting pan on our kitchen table and lifting the lid off…the steam rolled into the air and the wonderful smell wafted through the whole house!
Since being married for almost 12 years, I think I have made meatloaf approximately 3 times. Not because I didn’t want it…in fact, my husband always told me that he was not very fond of meatloaf, so I just never made it! Then one day I found a recipe that looked yummy and quite simple, so I went for it! We had it for supper and he wasn’t too enthused, but he took a bite and…wait for it…HE LIKED IT!!!
Here come to find out, he thought all meatloaf had way too many ingredients and he did not care for it that way. But after tasting a simple recipe, he was convinced that it wasn’t so bad! (pat on my back!)
This meatloaf recipe is fairly simple, though I added a couple “new” ingredients for extra flavor! My husband pointed out the flavors and really liked this recipe! Yay!!
This is also not your average meat “loaf”. Instead, I used a muffin pan. It helps with portion control and it saves from slicing too thin or too thick.

Yields 20 meatloaf muffins
Serves 6-7 (2-3 meatloaf muffins a piece) This makes 20.

Ingredients
- 3 pounds ground beef
- 2 eggs
- 1/2 cup almond flour
- 1-1/2 teaspoons garlic powder
- 1-1/2 teaspoons onion powder
- 1 cup sugar free bbq sauce
- 1 teaspoon liquid smoke
- 1 teaspoon salt
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350.
- Mix all ingredients in a big bowl.
- Make balls big enough to fit nicely in regular size muffin pan (about 1/4-1/3 cup size)
- Once meat mixture is in muffin pan, drizzle some sugar free ketchup over each one.
- Place in preheated oven and bake for 20 minutes.
Notes
This recipe should make around 20 meatloaf muffins.
