Berries…Black, Blue & Raz

Ahh, berries…I could eat them every day of the year and not get tired of them.

Growing up our family had woods behind our house (my playground).  Walking in the woods you could find wild blackberries, raspberries and strawberries.

I couldn’t wait for berries to be in season so I could take my bowl/bucket and pick berries.  The point was to bring some home for my mom to make a pie.  We made it home…but to say all the berries made it home is a different story!

Natural Sweetness

There are so many recipes out there for berry compotes, berry sauce and toppings, but alot of them are filled with added sugar.  I love this very berry compote recipe because the only “sugar” in it is all-natural from the berries.

Adding a 1/4 teaspoon of THM Super Sweet (the perfect amount in my opinion) and just a tiny amount of orange extract is all this recipe needs.  There’s just enough orange extract to make this compote pop with fresh flavor.

 

Fresh Or Frozen

Oh, did I mention that you don’t need fresh berries for this recipe?  I always have a bag or two of frozen berries in my freezer.  Fresh berries can be expensive when they are not in season, so frozen is the way to go!

Berry Lovin’ Family

My family loves berries;  well, my husband will tolerate them, but he’s not a big fan. That’s alright…more for me!

We eat alot of THM waffles & pancakes, Greek yogurt and oatmeal so this very berry compote is going to be put to good use.

Ingredients

Instructions

  1. Place all ingredients in a saucepan on stovetop and cook until berries are softened.
  2. Smash berries.
  3. Cool and store in a small jar in fridge.

Notes

This recipe can be doubled. Store in fridge and use within a week.
