These cheeseburger quesadillas are low carb, convenient and have all the flavors of a delicious, juicy cheeseburger!!

Family Approved Quesadillas

My family has been enjoying chicken quesadillas every weekend.

It has become a traditional Saturday dinner at our house.

I did not have chicken on hand one Saturday so I used ground beef instead.

Adding all the necessary ingredients to make a cheeseburger, these quesadillas were surprisingly delicious.

Cheeseburger Quesadillas Can Be Convenient

Low-carb tortilla wraps come in so handy for recipes like this one. You could stock up while they’re on sale and put some in the freezer for future use.

The low carb wraps I chose to use for this recipe is Mission Low Carb. You can usually find them at Walmart in the bread aisle.

How Hard Is It To Make These Quesadillas?

To make these quesadillas all you need is a hot griddle or a big skillet.

You take one wrap, fill half of it with the cheeseburger filling and then fold the other half over top of it.  

Lay it on the hot griddle. Wait a few minutes and check and see if it has crisped up then flip it over to fry the other side.


What you will love about this recipe is that the filling gets mixed up in one bowl…and that means less dirty dishes!  Yay!  

What Can I Eat With Low Carb Cheeseburger Quesadillas?

Because this is in an S category for the Trim Healthy Mama, it is best to stick with low carb sides such as non-starchy vegetables and dip or a nice side salad.

How To Store Leftover Quesadillas

Storing these quesadillas is easy peasy.

If you have leftovers the easiest way to store them would be in a small air tight container in the fridge.

Re-heating Quesadillas

When it comes to re-heating your leftover cheeseburger quesadillas, you have a couple different options.

You could reheat your leftover quesadillas on a cookie sheet in a 400 degree oven for a few minutes or until crispy again.

Another option would be to just microwave them for 30 seconds or so.

This will not give you a crispy quesadilla but it is just as delicious.

Cheeseburger Quesadillas

Low carb cheeseburger quesadillas are perfect for a quick meal… They  require very little time to make, and are loved by adults and kids alike.

Ingredients

Instructions

  1. Mix all ingredients together (except wraps of course)
  2. Scoop about 1/3-1/2 cup of mixture on half of a wrap.
  3. Fold the top over the mixture side and lay on a hot griddle (I don't even use non-stick spray)
  4. After a couple minutes, check for crispiness, then flip the wrap over to crisp up the other side.
  5. Cut each wrap in half to get a nice little quesadilla.
