Now, you may be turned off by the sound of chia seeds in your pudding, but please hear me out!
There are many chia pudding recipes you could make, but the chia seeds are whole.
In this pudding recipe you may not even detect any chia seeds because they are blended so well.
Even if you do know, you could possibly serve it to your family without them knowing!
Aside from the superfood, chia seeds, in this dessert, you will find the basic ingredients for a delicious homemade chocolate pudding.

Why Do I Need To Use Chia Seeds In This Pudding?
Believe it or not, chia seeds will thicken your pudding into a nice texture that is very close to the real thing!
When blended all together, the chia seeds are pulverized with all the other ingredients, so there are no whole pieces of chia seeds to be found.
So if you’re one who is texture-sensitive, you will probably enjoy this pudding.

Is Chocolate Chia Pudding Low Carb AND Sugar Free?
Yes to both!! You can have a serving of this pudding without feeling guilt or getting a sugar rush!
If you grew up eating boxed pudding, you will notice a slight difference when eating this low carb dessert.
Boxed pudding mixes have fake ingredients in them and are not the best to eat if you want your body to stay healthy and on plan.
If you are new to eating low carb or sugar free, you may need to allow your tastebuds to adjust to flavors and textures of some recipes.

The Best Sweetener To Use For Homemade Chia Pudding
For this recipe I chose to use Lakanto brand sweetener.
The golden is my favorite replacement for brown sugar, but you can definitely use classic as well.
If you follow the Trim Healthy Mama plan and would like to use one of their sweeteners, just note that Gentle Sweet and Super Sweet Blend are much sweeter than Lakanto sweeteners.
For instance, if using THM Gentle Sweet, you may need to start with about half of the amount called for in this recipe.
The nice thing about this pudding is the fact that you can taste as you make it.
If you like it sweeter, feel free to add more of your favorite sweetener.

Chocolate Chia Pudding
Chocolate chia pudding is a sugar free, low carb treat that is made with a superfood! Creamy and smooth, you will find that this pudding will keep you full, as well as satisfy your chocolate cravings.
Ingredients
- 1 cup cashew milk (or almond milk)
- 2 Tablespoons heavy cream
- 2-1/2 to 3 Tablespoons Lakanto golden or classic sweetener (see notes)
- 3 Tablespoons dry chia seeds
- 2-1/2 Tablespoons cocoa powder
- pinch of mineral salt
Instructions
- Mix all ingredients in a blender.
- Pour into one bowl or a couple individual bowls.
- Set in refrigerator for atleast 30 minutes to firm up a bit.
Notes
If you are using THM Gentle Sweet, only use about 1/2 of the amount of the sweetener it calls for. You can always add more sweetener. Taste as you go.
