Coconut Scotchies Are Cookie Bars
I love cookie bars…whether they are chocolate chip, peanut butter, chocolate mint, etc.
With my family of five always needing something sweet after our supper meal, I try to have something on hand most of the time.
We like a variety of desserts and sweets, but I can say for sure that one of our all time favorites is cookies and cookie bars!
I could make a new treat every night, but my family always seems to appreciate just plain ‘ol chocolate chip cookies any day of the week!!
What Does a Coconut Scotchie Taste Like?
I got inspired to try my hand at a healthy cookie bar, and I was pretty amazed with how these bars turned out!
It took me a few times of changing ingredients around, but I finally have a dessert that passed the family taste test!
These cookie bars have a sweet butterscotch flavor with a hint of coconut.
Chocolate Chips and Brown Sugar
The chocolate chips are optional, but seriously, who wouldn’t want chocolate chips in every bite of a cookie bar?
It was a must for me to add them! I used Lily’s chocolate chips because they are sweetened with stevia, but you could chop up a 85% dark chocolate bar and use that as well.

If you’d rather not make homemade low carb brown sugar, you can definitely use your favorite store bought version.
A favorite brown sugar for low carb baking is Lakanto Monkfruit golden sweetener!
Double This Coconut Scotchies Recipe
This recipe makes a small batch so feel free to double or triple the ingredients and use the proper size baking dish.

Ingredients
- 1/4 cup butter
- 1/2 cup packed Gwen's brown sugar or your favorite low carb brown sugar
- 1 large egg
- 1/2 teaspoon vanilla
- 3/4 cup baking blend
- 1 teaspoon baking powder
- 1/8 teaspoon mineral salt
- 1 Tablespoon water
- 1/4 cup unsweetened coconut flakes
- 1/4 cup nuts, optional
- 1/4 cup Lily's chocolate chips or THM Chocolate Chips , optional but highly recommended 🙂
Instructions
- Preheat oven to 350.
- Melt butter in saucepan on stovetop or in a microwave-safe bowl in the microwave.
- Once butter is melted, whisk in the brown sugar.
- Add egg & vanilla and mix well.
- Add baking blend, baking powder, salt & water. Give another good stir.
- Stir in coconut flakes the add nuts and chocolate chips if using.
- Batter will be thick. Spread in a 1 qt baking dish(6x9) and press down with fingers.
- Bake for 15-20 minutes or until light golden brown. Do not overbake.
- Cool then store in airtight container (if they last that long)
Notes
These cookie bars are best eaten the same day as they are baked. They are still good the next day, but tend to get slightly dry.
