Are You Ready To Sink Your Teeth Into The Yummiest Double Chocolate Brownies Ever?

Sounding very bias and perhaps over-confident is not my usual personality, but I have never been so excited about a new recipe creation.

I think I’ve been a bit fearful in the past to try more baked goods, but I finally did it!

The first time I made these double chocolate brownies I knew I had to make a few adjustments.

They weren’t bad, but I wanted them to be a winner, and I’m pretty sure I have done just that!

Taste Testers

My husband and 3 boys are my taste-testers…every single time I make anything new, it’s become a fun “game”.

We all gather in the kitchen and on the count of 3 we all take a bite of whatever is it I made.

After tasting, chewing and swallowing, someone will say “ok, 1 – 2 – 3”!

We all give a thumbs up, thumbs down or thumbs in-between.  Haha!!

It is fun to do this as a family, but more importantly, it helps me to know if my recipes are indeed child-friendly as well as husband-friendly! 🙂

Good To Know About These Double Chocolate Brownies

  • I chose to use baking blend as the flour of choice for this recipe.  You can definitely use the Trim Healthy Mama Baking Blend or you can make your own homemade baking blend by using Nili’s recipe (click here to see her recipe).  In my opinion Nili’s baking blend is quite similar in texture, taste and consistency.  So if you’re out of the THM brand and just can’t wait for your next order to arrive, go ahead and make your own.
  • There are many different brands of cocoa powder out there.  Navitas Cacao Powder is an awesome one!   Trying a variety of brands, I really like the flavor of this one.  You can usually find it at a local health food store, but you can for sure buy it anywhere online.
  • You can use whatever THM-friendly sweetener you would like for this recipe, but I use Trim Healthy Mama Super Sweet Blend.  If you were to use Gentle Sweet, start with using a couple tablespoons extra than taste as you go!

A Trick To Keep Brownies Moist!!

You may ask why I’m using a couple egg yolks and not all whole eggs.

Well, with the research I’ve done, it is true that egg whites tend to dry things out a bit.

The yolks will keep things more moist, and that’s what we’re looking for in a delicious brownie.

  1. Preheat oven at 350
  2. Mix together butter and sweetener until creamy.
  3. Add eggs and vanilla and stir.
  4. Add remaining ingredients (dry ingredients) and stir well.
  5. Stir in chocolate chips.
  6. Spoon the batter into a greased 8x8 square baking dish and sprinkle chocolate chips on top if desired.
  7. Bake for 15-20 minutes. -see notes-

on the baking time, because every oven temperature is different, you may want to check your brownies around the 15 minute mark. For me they were still slightly undercooked at 15 minutes, but 17 minutes was perfect for me. I baked them for 20 minutes the first time and they were a bit crumbly after cooling down. So be your own judge on timing.
