What I Need To Make Healthy Macaroni Salad
First of all, you can probably find all of these ingredients in your local grocery store.
- Dreamfields elbow macaroni
- hard boiled egg
- mayonaise
- mustard
- white vinegar
- sweetener
- mineral salt

How Can Macaroni Salad Be Low Carb?
Many of you already use Dreamfield’s pasta, so you know how versatile it can be.
This type of pasta can be used as a personal choice item in an S or E setting for the Trim Healthy Mama.
If Dreamfield’s pasta messes with your blood sugar, then it is best to not eat it at all, but for several, it is perfectly fine.
This pasta can be served with a low carb meal, but Trim Healthy Mama recommends only eating a serving (1 cup) no more than once a week.
There is a special coating on the pasta (recently listed as inulin) that helps us not to digest most of the carbs.
Many people have said that you shouldn’t reheat the pasta since the coating won’t have as much affect with the carb setting.
I don’t have all the answers on Dreamfield’s pasta, so all I can say is if it doesn’t bother you, go ahead and eat it!

How Should I Store Macaroni Salad?
Once the pasta is cooked and cooled and all the ingredients are mixed in very well, it is best to store in an airtight container in the refrigerator until it is nice and cold.
This can take up to an hour, but it’s so worth the wait!
I personally love warm macaroni salad…and there’s nothing wrong with that.
When ready to eat, try serving it with these chicken quesadillas! They are delicious and would go well with macaroni salad.

Healthy Macaroni Salad

Ingredients
- 1 cup Dreamfields elbow macaroni, uncooked
- 1 hard boiled egg, chopped
- 3/4 cup mayonnaise
- 1 Tablespoon prepared mustard
- 1 teaspoon white vinegar
- 1/8 cup Monkfruit classic (or your favorite sweetener that measures like 1/8 cup of sugar)
- 1/8 teaspoon mineral salt
- splash of almond milk, if needed
Instructions
- Cook pasta for 10 minutes or until tender, then drain and cool.
- Mix all remaining ingredients in separate bowl, then add cooled macaroni.
- For best results, cover pasta and chill in refrigerator for atleast an hour before serving.

Add-in options: dill relish, shredded cheddar cheese, cucumber
