If you have ever made broccoli soup on the stovetop, you know it takes a bit for the broccoli to get tender.

Using an Instant Pot, broccoli soup has never been easier! You literally dump all the ingredients in the pot and cook for 3 minutes.

Cooking has never been so easy and fun! Simply put your food in the Instant Pot, put the lid on and walk away…Bam…you’re done!!!

What Will I Need To Make A Creamy Broccoli Soup?

First of all, you will need an Instant Pot.

(Ok, so you don’t NEED one, but it does come in handy for this recipe…and it’s an awesome investment!)

You will also need:

  • frozen broccoli
  • frozen okra
  • chicken broth
  • garlic powder
  • onion powder
  • ground mustard
  • thyme
  • salt & pepper
  • heavy cream
  • cheese

How To Make My Soup Creamy

This is where you can decide if you want a few broccoli pieces to add texture to your soup, or if you want it all super creamy!

When the soup is done cooking in the Instant Pot, carefully pour contents into a blender.

You may need to blend in batches. You don’t want hot soup too close to the top of your blender incase it would overflow.

A high-powered blender, like the Blendtec Total blender, will only take about 10 seconds to get your soup silky smooth!

Again, if you prefer a few pieces of broccoli for texture, simply leave 2-3 cups of soup in your Instant Pot and blend the rest.

What Is The Secret Ingredient In This Low Carb Soup?

There is a secret ingredient, but you would never notice after everything is blended until smooth.

Are you ready for this? The secret ingredient is…OKRA!!

What Is Okra?

Okra, technically a fruit, but usually thought of as a vegetable, originated somewhere around Ethiopia.

It is packed with valuable nutrients, including high fiber and folic acid.

If you grew up in the south, you know that okra is a staple in meals.

Unfortunately, southern okra is usually coated in cornmeal and fried in oil. Delicious as it may be, it’s not the healthiest choice.

Benefits Of Eating Okra

  1. Okra contains soluble fiber which makes you feel full faster and longer. So it is tremendous for weight loss!
  2. It is said that okra helps reduce breast cancer cells.

  4. Because okra contains vitamin C and A, it can help with eye health.
  5. Some say that okra is a wonderful brain food and, in some countries, is eaten to improve mentality.

Using Okra As A Thickener For Soup

You guessed it…I added okra to get a thicker texture in this broccoli soup.

Many people don’t like the slimy texture of okra while it’s cooking.

Unless you cook on high heat and get all the slime out, I’m afraid you’re stuck with it.

Did you know that the slime in okra is actually the thickening agent?

So if you don’t eat okra for any other reason, atleast you can use it as a thickener for this delicious soup!

Oh, and don’t worry…your soup will not be slimy when it’s done cooking and has been blended!!

If you are still leery of using okra in soup or any other dish, you may want to try pickled okra. It is a great low calorie snack that gives you the feeling you’re eating pickles.

Can Creamy Broccoli Soup Be Dairy Free?

You can certainly make this soup recipe dairy free.

Replacing heavy cream with coconut cream is an option, though it may have a slight coconut flavor.

As far as the cheese goes, you could replace cheese with nutritional yeast.

Nutritional Yeast

If you’ve never heard of nutritional yeast, it is definitely something to incorporate in your recipes!

Nutritional yeast is dairy free and provides a cheesy flavor often making a great substitute for Parmesan cheese.

It also has a nutty, savory flavor and can be sprinkled on popcorn, vegetables, casseroles, soups, salads and more.

Storing Broccoli Soup

Storing this soup is a cinch! Just pour any leftovers in an airtight container and let it cool before putting a lid on and refrigerating.

Is This Soup Low Carb?

Yes, indeed, it is a low carb recipe!

The good fats come from heavy cream and the shredded cheese.

For the Trim Healthy Mama, this soup would be an S meal…simply meaning that there are no significant amount of carbs.

No Special Ingredients For This Soup Recipe

Following the Trim Healthy Mama lifestyle is all about food freedom.

You can certainly eat THM recipes without all of the special ingredient (ie: oat fiber, almond flour, collagen, some sweeteners).

Fresh broccoli can be easily stored in a plastic bag in the fridge.

  1. Place in your Instant Pot, the broccoli, okra, broth and seasonings.
  2. Put lid on and turn knob to sealing.
  3. Press "manual" or "cook" and set for 3 minutes.
  4. When done, do a QPR (quick pressure release)
  5. Take lid off and blend contents in your blender (blend in batches if needed)
  6. Pour contents back into pot and add heavy cream and cheeses.
  7. Give a good stir until everything is incorporated.
