What Ingredients Do I Need To Make Red Berry Curd?

The ingredients are super simple and can be found in your grocery store!

  • fresh or frozen strawberries
  • fresh or frozen raspberries
  • lemon juice
  • egg yolks
  • low carb sweetener
  • butter

Can I Make Curd Without An Instant Pot?

Of course you can!

If you do not own an Instant Pot, it is still possible to make this delicious curd.

First, you will want to put your berries, lemon juice and sweetener in a blender and blend till smooth.

*if using frozen berries, place berries, lemon juice and sweetener in a pot on your stovetop and cook over medium-low heat until the berries are thawed...then proceed to blend that mixture.

For the curd, make a double boiler by pouring about 2 inches of water in a pot on the stove and bring to a boil.

Once boiling, turn heat down to medium-low and place glass bowl on top of pot (making sure the glass bowl does not touch water).

Add egg yolks and butter to glass bowl then stir them for 4-6 minutes. It is important to stir the eggs constantly so they don’t scramble!

Remove from heat as soon as egg yolks have thickened but not scrambled. If you did get bits of cooked egg in your curd, go ahead and strain it through a fine mesh strainer to remove…then pour back into bowl.

Add berry sauce to curd and mix thoroughly.

Allow it to cool and store in a Mason jar or container with airtight lid in the refrigerator.

If you would rather not have a berry flavored curd, you will probably enjoy this Lime Curd. (you could also use lemons if you don’t have limes…so tasty)

What Can I Eat With Red Berry Curd?

There are so many ways to enjoy this berry curd!

A few favorite ways to eat this curd would be to swirl it in your yogurt or top your pancakes and waffles.

This would make a delicious topping for homemade vanilla ice cream or cheesecake.

Another way to indulge in this delicious curd would be on homemade bread! Use it like jam…yum!

How To Store Red Berry Curd

Once it has cooked and cooled on the counter, you will just want to make sure it’s in a container with an airtight lid. Then simply store it in the refrigerator for up to a week.

Instant Pot Red Berry Curd
Yield: makes 1-1/2 cups

Instant Pot Red Berry Curd

Prep Time: 5 minutes
Cook Time: 10 minutes
Additional Time: 1 minute
Total Time: 16 minutes

Instant Pot red berry curd is creamy, fruity and has just the right amount of sweetness! This delicious treat looks so fancy, but it is easily made in your Instant Pot. It's low carb and sugar free, making it a perfect for a guilt free snack. This recipe is also Trim Healthy Mama approved, so get a spoon and enjoy a berry tasty red berry curd!

Ingredients

  • 1/2 cup fresh or frozen strawberries, sliced
  • 1/2 cup fresh or frozen raspberries
  • 1 Tablespoon lemon juice
  • 3 egg yolks
  • 1/4 cup THM Gentle Sweet
  • 4 Tablespoons melted butter

Instructions

  1. Blend strawberries, raspberries, lemon juice, egg yolks and sweetener in blender until smooth.
  2. Stir in melted butter and pour into pint jar (or 2 half pint jars)
  3. Twist jar lids on just finger tight.
  4. Pour 1 cup of water in the inner stainless steel pot of your Instant Pot.
  5. Place trivet in pot.
  6. Set jar of curd on top of trivet and close the lnstant Pot lid.
  7. Set to sealing, not venting!
  8. Set manually for 10 minutes, then when time is up allow it to do a natural pressure release for 10 minutes. Finish with a quick pressure release.
  9. Using oven mitts or towel, take the hot jar out and set on counter.
  10. Carefully take the jar lid off and give a good whisk.
  11. Leave on counter to cool for atleast 30 minutes before placing lid back on and refrigerating.
