I have to admit, though, that there’s still a side of me that worries just a little when I click “publish”. 

I worry someone won’t like a recipe as much as I do.  I understand we all have different taste buds and some will not enjoy certain recipes as much as others.

That’s OK!  Actually, I’m here today to tell you that if you love the fresh flavors of lemon, this is the recipe for you!

Creamy Dreamy Frosting

I love everything about the frosting on my lemon bars.  It’s heavenly!

It’s like taking a bite into a cloud…fluffy and not too dense.

Put this frosting with the lemon cake and you’ve got a scrumptious dessert!

My lemon bars with lemon frosting have a cake feel, though it’s not as fluffy as cake.

I’ve read that bars are slightly more dense than cake, but not quite cookie-like in texture.

So somewhere in between we get a bar. 

Call it whatever you want.  I just call it delicious!

In my opinion these bars are best when they’ve cooled thoroughly.

I actually prefer them after they’ve been in the fridge for a few hours or even overnight.

Somehow the flavors in the cake get melded together even more after sitting for a while.  Most of the time I enjoy warm cake, but this lemon bar recipe is completely exquisite cold!!

I store mine in a simple airtight container in the fridge.  Some of my boys helped me eat it and it still lasted for about a week.

I know it sounds funny, but after every bite, I couldn’t wait to take the next bite!  It’s so good…but then again I love lemon flavor.

My kids loved this lemon bar with its fluffy frosting.  That makes me so happy!

How To Get The Perfect Bars

I will be the first to admit that I don’t always succeed at cutting straight lines in my cakes, brownies, etc.

Aside from perfect cuts, I like to put a piece of parchment paper in my 8×8 glass baking dish, leaving the edges hanging over the sides of the pan for easy lifting.

Parchment paper is perfect for pulling these bars right out of the pan (after cooling for a bit of course).  

I actually wrapped it all up with plastic wrap and cut them the next morning. 

It works best for the bars to cool completely before frosting and cutting. 

Then I just put the bars in my container for easy access. 

You could always leave it all in the pan it was baked in.  Not a problem at all.

What Ingredients You’ll Need To Make Lemon Bars With Lemon Frosting

  • almond flour
  • THM Gentle Sweet
  • butter
  • cream cheese
  • lemon juice
  • egg
  • baking soda
  • heavy cream

 

Color It Yellow

To get a yellowish color to your lemon bars and frosting, all you need to do is add about 1/8 of a teaspoon of turmeric.

It’s amazing how it turns into a light yellow color without changing the flavors. 

I will tell you that it won’t happen immediately after stirring the turmeric in.

But after you let it set for a couple hours, take a look at the difference! 

Of course the more turmeric you add, the more vibrant yellow your dessert will become! (just don’t add so much that your lemon bars taste like turmeric)

Ingredients

  • BARS:
  • 1-3/4 cups almond flour
  • 2-1/2 Tablespoons THM Gentle Sweet
  • 4 Tablespoons butter, softened
  • 2 ounces cream cheese, softened
  • juice of 1 lemon
  • 1 egg
  • 2 teaspoons baking soda
  • FROSTING:
  • 4 ounces cream cheese
  • juice of one lemon
  • 1/2 cup heavy cream
  • 3 Tablespoons THM Gentle Sweet
  • sprinkle of turmeric , optional for color

Instructions

  1. Preheat oven to 350.
  2. For the bars, mix all ingredients together in bowl and spread into parchment lined 8x8 baking dish.
  3. Bake for 20 minutes.
  4. Allow to cool thoroughly. (I cover it with plastic wrap and let it refrigerate for a few hours or overnight for best results.
  5. Frosting:
  6. Using a hand mixer, mix frosting ingredients until smooth and creamy.
  7. Spoon on top of cooled bars.
  8. If using parchment paper, lift the whole frosted cake out of pan and slice into bars.
  9. Store bars in airtight container in fridge.

Notes

You can definitely cut these into squares or whatever shape you desire. Bars are just a nice size.
