There’s nothing quite like the taste of freshly squeezed lemons made into lemonade…or better yet, why not turn it into a frozen treat that everyone can enjoy?!!
What’s the saying…”when life hands you lemons, make lemonade”? Well, life didn’t hand me lemons…(I actually bought a bag of them at my local grocery store). I know that summertime is the time for cold refreshing drinks, smoothies, ice cream and popsicles. These days have been super hot and my boys are constantly wanting to cool down with ice water, ice cream, Good Girl Moonshine and plenty of other “cool” things.
My family has been traveling all over the country this summer…we were gone from home for 4 weeks and now we are home for a couple weeks before heading out again. You can read about what we do in a previous post called Traveling Tips for the Trim Healthy Mama. Anyhow, we have to eat out alot, particularly at fast food restaurants. One of those stops was at Sonic. We don’t have a Sonic close to where we live, but there are several out west. Of course, if you know about Sonic’s happy hour, you know that their soda pop and slushie prices are 1/2 off during that time. Well, I have not had my favorite drink from there in years and just wanted to taste it once again. That drink is their lemon berry slush. I think the flavors of lemon and berries go so well together…and once again, they delievered!!
I got thinking of how I could incorporate these yummy flavors into a icy treat. I made up some lemonade (lemons, water & THM Pure Stevia), then poured into my favorite popsicle molds, added a few small berries and there you have it…finished! This recipe is really rather simple, but the results are delicious and oh so refreshing!! My boys could hardly wait for them to freeze for the proper amount of time…this is definitely going to be a staple on these hot summer days!

A refreshing pop of flavor with each bite!
Ingredients
- 1 cup freshly squeezed lemon juice (about 7-8 small lemons)
- 4 cups water
- 8 "doonks" THM Pure Stevia Powder (that equals 1/4-1/2 teaspoon)
- berries
Instructions
- Squeeze lemons into large bowl.
- Add water and stevia. Mix well.
- Pour into popsicle molds about 3/4 of the way, leaving room for berries.
- Drop a few small berries in each mold.
- Put lids on and freeze for 4-6 hours or overnight.
Notes
This recipe makes around 5 cups of liquid. Depending on how many popsicle molds you use, you may have leftover lemonade!
I like my lemonade just slightly tart, so if this is too tart for you, just add a couple more "doonks" of Pure Stevia. (a "doonk" is 1/32 of a teaspoon)
