Lemon Blueberry Cream Pie
Allow me to tell you about my creamy, lemony, newest addition to my recipe notebook.
I have made several desserts since I started blogging, but every time I make a new one, it always seems to take 1st place (until I make another new dessert).
Before THM, sweets and sugar were my downfall big time.
So I’m happy when I can eat a healthy dessert and not worry about it having a bad affect on my body!
Spring And Summer Foods
Isn’t it interesting how we as humans put certain foods with the different seasons of the year?
Spring we normally think about rhubarb, spinach, lettuce, asparagus, etc.
Summer means strawberries, peppers, cherries, green beans, melons and more!
Fall months are great for apples, butternut squash, sweet potatoes, turnips and swiss chard.
Lastly, Winter comes with foods like oranges, dates, brussel sprouts, pomegranates, etc.
Fresh And Fruity
I love the taste of fresh citrus and berries together!
Berries are such wonderful things in my home.
Treasuring them for myself is important because my three boys would devour them in one sitting. Ha!
Don’t get me wrong…I am very pleased my kids love fruit!
Thoughts Of Summer
As I was thinking of a new cream pie to create, thoughts of summer food were coming to my mind.
Lemon and blueberries go so well together and they are the perfect combination of summer flavors if you ask me!
Lemon Blueberry Cream Pie Isn’t For Everyone
If you are like my husband than I won’t take offense if you don’t care for the flavors in my pie.
That’s right, he has never really cared for fruit, especially berries.
He and my boys usually taste test everything I make, but I wasn’t going to force him to do it this time.
I’m not that insensitive…ha!

- blueberries
- lemons
- gelatin
- cream cheese
- sweetener
- heavy cream
- almond flour
- butter
What Sort Of Dish Should I Use?
Yes, I call this a cream “pie” so naturally you think of using a pie dish.
I use a pie dish like this one, but there’s absolutely nothing wrong with using another shaped pan or baking dish.
The filling is sturdy enough, but it’s very creamy so it may not make the perfect slice of pie.
It would work just fine to make this dessert in an 8×8 square dish and spoon it out instead!

Yields 1 cream pie
This luscious, creamy pie is full of summer flavors, vibrant and fresh! Perfect for those family picnics and end of the school year parties!

Ingredients
- CRUST:
- 3/4 cup almond flour
- 2 Tablespoons THM Gentle Sweet
- 3 Tablespoons melted butter
- BLUEBERRY SAUCE:
- 2 cups frozen blueberries
- juice of 1/2 lemon
- 1 teaspoon THM Super Sweet Blend
- 3/4 cup water
- 1-1/4 teaspoons THM gelatin (you could use Knox gelatin here if desired)
- FILLING:
- 12 ounces cream cheese, softened
- juice of 2 lemons
- 6 Tablespoons THM Gentle Sweet (or my homemade xylitol-free version of Gentle Sweet )
- 1/4 cup heavy cream
Instructions
- For the crust, mix all crust ingredients in a bowl and press into a pie dish or 8x8 square pan then refrigerate.
- Blueberry Sauce: Pour blueberries, lemon juice, sweetener and water into a pan on the stovetop and heat until it just starts to bubble.
- Smash the blueberries slightly to make a sauce.
- Sprinkle gelatin a little at a time, stirring while doing so.
- Pour sauce into a bowl and refrigerate while making the filling.
- Filling: Using a hand mixer, mix cream cheese, lemon juice, sweetener and heavy cream together until well blended.
- Pour filling into crust and refrigerate or freeze until the filling is slightly firmed up.
- Mix blueberry sauce before pouring on top of filling.
- Store in refrigerator.
