What Is A Quesadilla?
We order quesadillas at fast food restaurants or make them at home, but do we really know exactly what a quesadilla is?
A quesedilla is a Mexican recipe that consists of a tortilla wrap with some sort of filling…normally cheese, but it could be a variety of meats, cheese, spices, etc.

Ingredients Needed To Make Low Carb Chicken Quesadillas
- chicken
- salsa
- sour cream
- shredded cheese
- taco seasoning
- low carb wraps
What Makes Chicken Quesadillas Low Carb?
For this recipe the wraps I chose to use are definitely a Drive-Thru-Sue option.
If you are a Trim Healthy Mama, you know that Drive-Thru-Sue means that it is a quick, easy-to-grab food. (yet still on plan)
The wraps used in this recipe are Mission Carb Balance wraps and they are delicious!
With only 4 net carbs per wrap, you can stay in an S setting with no worries!
The filling contains good fats and protein, so you’re definitely getting a low carb option with these chicken quesadillas.

What Kind Of Chicken Should I Use To Make Quesadillas?
You can make chicken your favorite way…plain or with some seasonings.
You could also do what I did and buy a rotisserie chicken at the grocery store for sake of convenience!

Quesadillas Can Be An Easy And Convenient Meal
Yes, convenience goes a long way when it comes to putting a delicious meal on the table at supper time!
When you have the convenience of an already cooked chicken from the store, store bought wraps and several toppings, well, it’s pretty easy to whip together for your hungry crew!
You could definitely use your skillet to make these quesadillas, but I highly recommend an electric griddle!
With an electric griddle you can make atleast 4 quesadillas at a time. Griddles are also great for cooking multiple pancakes, grilled cheese and other foods!

Do I Have To Use Chicken?
Absolutely not! Chicken is just a nice lean protein that a lot of people like to use in tacos or quesadillas.
It’s a nice change from beef, but if you would rather use ground beef, go for it!
You could probably get away with using the same amount of beef as you would chicken in this recipe.
Of course, if you are a vegetarian or just aren’t in the mood for meat, go ahead and make it meatless.
Many people also love a plain cheese quesadilla…so make it your own!

What Sides Can I Eat With A Quesadilla Meal?
Because these quesadillas already have your bread, protein, good fats and toppings all in one bite, you may not need a whole lot of sides.
If you would like to have some additional food, you could slice some avocado or prepare some of your favorite non-starchy vegetables.
Can I Make Low Carb Chips
Low carb tortilla chips can be made by slicing a low carb wrap into small pieces.
Next, spray them with a little butter spray and put on a paper towel in the microwave for a minute or until crunchy!

If you are a Trim Healthy Mama and don’t mind eating a crossover meal once in a while, you will love this Spanish Brown Rice.
If you do not follow the Trim Healthy Mama lifestyle and just want a healthy meal, brown rice is always a good option!
The Best Taco Seasoning To Use For Tacos and Quesadillas
The best taco seasoning would be one that is homemade!
Store bought taco seasonings usually contain off-plan ingredients, and don’t even taste all that great to be honest.
My recommendation for a tasty homemade taco seasoning is from Darcie’s Dish. Her Homemade Taco Seasoning beats them all hands down!!

Low Carb Chicken Quesadillas
Low carb chicken quesadillas couldn't be easier to make! They're perfect for a quick lunch, yet will keep you full and satisfied. Adults AND kids love these savory quesadillas with salsa and sour cream on the side!
Ingredients
- 2 cups cooked chopped chicken
- 1/2 cup salsa
- 1/4 cup sour cream
- 3/4 cup shredded cheddar cheese
- 1 Tablespoon taco seasoning
- 6-7 low carb tortilla wraps
Instructions
- Mix together chicken, salsa, sour cream cheese and taco seasoning in a bowl.
- Fill one half of a wrap with about 1/2 cup of chicken filling.
- Fold wrap over the filling side.
- Place on hot griddle (set at 300) or hot skillet.
- Cook until it starts to get golden then flip.
- After cooking, cut in half if desired and dip in salsa and sour cream.
