This low carb granola is sweet and crunchy…making the start of your day so satisfying! It is a perfectly healthy road trip snack, especially when adding a few sugar free chocolate chips!
A Breakfast ChangeÂ
I started making my own granola about three years ago…(it was not low carb granola).
I wanted to have a healthy breakfast for my husband since what he was eating back then just wasn’t keeping him full.
Let me tell on him! He used to eat a banana with peanut butter for breakfast! THAT’S IT!!!
I know I couldn’t eat that and stay full for a few hours either.
Green Smoothie Girl Granola
The recipe I found a few years ago is the same one I still make for my husband today!
It came from Robyn Openshaw (aka Green Smoothie Girl).
I met her in person and found out that she had a clean and healthy granola recipe, so I thought I’d try it.
It is delicious and a winner for my husband; therefore he eats it every single day for breakfast. Here’s her granola recipe.
Because Green Smoothie Girl’s granola uses good fats AND good carbs, it would be a crossover.
Also, the sweeteners she uses are pure maple syrup and honey.
It calls for 1/2 cup of each for a batch that ends up being 11-12 cups of granola.
You can have a small portion in a crossover setting once in a while.
Low Carb Granola
So I used some of the same ingredients, added a few things, took away some things and here I have a granola that is super satisfying!!!
Yes, it can be used in an S meal or snack.
I eat it plain with a sprinkle of Lily’s chocolate chips.
I love it as cereal with unsweetened almond milk and strawberries as well.
You can use this granola in a variety of ways…use your imagination!
My husband has also been eating this recently (meaning that I need to make more of his granola so he doesn’t eat all of mine) 🙂

Yields 4-5 cups
A satisfying, low-carb breakfast or snack to eat at home or on the go! With a few chocolate chips or strawberries, this granola has flavors that will blow your taste buds away!!

Ingredients
- 2 cups unsweetened coconut flakes (I used larger flakes, but small ones are fine too)
- 1/4 cup of each nut and/or seed: pumpkin seeds, cashew pieces, sunflower seeds, sliced almonds and ground flaxseed
- 1/2 Tablespoon cinnamon
- Lily's chocolate chips , optional
- 1/4 cup coconut oil
- 1 Tablespoon THM Super Sweet Blend
- 1/2 Tablespoon vanilla
- 1/2 teaspoon maple extract
Instructions
- Preheat oven to 250.
- Pour coconut flakes, nuts/seeds and cinnamon in a small roasting pan or bowl and give a stir.
- In saucepan melt coconut oil and add THM Super Sweet, vanilla and maple extract.
- Add wet ingredients to dry ingredients and mix well.
- Pour everything in a small roasting pan or a large cookie sheet lined with parchment paper & bake for 25 minutes.
- Take out and stir, then bake another 15-25 minutes or until granola is no longer "wet".
- Once cooled you can add chocolate chips if desired.
