Aside from the baking blend, you should be able to find all the ingredients for this cheesecake in your local grocery store.
If you don’t have baking blend, it can easily be made with equal parts almond flour, coconut flour and ground flaxseed.
- THM baking blend or homemade baking blend
- sweetener
- butter
- cream cheese
- Monkfruit classic sweetener
- frozen mixed berries
- heavy cream

This recipe is certainly low carb because it has no significant source of carbs.
Not only is it low carb, it is sugar free…win win!

How Many Servings Does This Berry Cheesecake Make?
It always depends on how big you cut the pieces, but if you cut average size pieces, you’ll get 12 squares of this dessert.

How Should I Store This Cheesecake?
It is best stored in an airtight container in the fridge.
This cheesecake will last for 5-7 days in the refrigerator, but if you don’t plan on eating it within that time frame, you can freeze it!
Freezing a no bake cheesecake will give it an ice cream-like texture.

No Bake Berry Cheesecake
Cool and creamy, this no bake berry cheesecake is perfect for a summertime treat! It can also be frozen to have an ice cream texture. Because it is sugar free and low carb, you can enjoy this healthy dessert with no guilt!
Ingredients
- CRUST:
- 1-1/2 cups THM Baking Blend (*see notes)
- 1 Tablespoon Super Sweet
- 4 Tablespoons melted butter
- FILLING:
- 2 blocks cream cheese, softened
- 1/2 cup Monkfruit classic sweetener
- 3/4 cup frozen mixed berries, thawed and drained
- 1/2 cup heavy cream
Instructions
- Mix the crust ingredients together and press into a 9x13 pan.
- In medium bowl, beat cream cheese and sweetener with hand mixer until combined.
- Mix in heavy cream until creamy and blended.
- Smash thawed berries with fork and gently stir into cream cheese mixture.
- Spread cream cheese mixture over crust and place in the refrigerator for atleast 4 hours or overnight for best results.
Notes
*If you do not have THM baking blend, you can use equal parts almond flour, coconut flour and ground flaxseed.
