I’m pretty obsessed with peanut butter, I cannot lie! I really do try not to have too much, as it would probably slow down my weight loss…but its SOOO good!!! This recipe has a bit of maple syrup in it. What?? Did I just say maple syrup? But that’s not on the THM plan, right? Well, all-natural maple syrup isn’t recommended on plan because of the blood sugar spike it gives, but, I’ve come up with a THM-friendly maple syrup that will not spike your blood sugar AND it is good for you!! I’ve used it on pancakes and it was delicious.
I named this recipe Peanut Butter Maple Fudge Swirl because the two main flavors are peanut butter and maple.
Where did I come up with the swirl? I’m glad you asked. Once you put them in the freezer to get firm, the coconut oil makes a nice swirly effect throughout this dessert. I personally think that these have a fudgy texture as well. It is best to store them in the freezer.
The fridge may be alright, but I like the nice “chew” from being firm. The coconut oil will cause them to start softening once out on the counter for a while. But they are still delicious that way too!!
It ‘s so nice to have a treat without the guilty feelings that come after eating sugary treats! Trim Healthy Mama has literally become my way of life and I don’t ever regret following this plan. I had a huge sweet tooth before THM and now when I crave something sweet, I can make a batch of on-plan goodies and just enjoy myself!

A mixture of peanut butter and maple syrup...so fudgy in texture!
Ingredients
- 1/2 cup natural peanut butter , no sugar
- 1/4 cup coconut oil (refined will not give a coconut flavor)
- 1 Tablespoon maple extract
- 1/4 cup simple maple syrup (recipe link here )
- 1/2 teaspoon Pyure organic Stevia (or THM Super Sweet Blend )
- 1/8 teaspoon salt
- 1/4 cup collagen
- 1/4 cup peanuts
Instructions
- Melt peanut butter and coconut oil in microwave for about 15 seconds. Whisk until well combined.
- Add the rest of the ingredients and stir.
- Place in a small glass dish or container. You could even use silicone molds like this one .
- Drop a few peanuts on top if desired.
- Place in the freezer until they are firm, about 15-20 minutes.
- If you used a silicone mold, take them out and store in an airtight container or a Ziploc bag.
Notes
I got 9 bars using my silicone mold, but you can make smaller or bigger pieces depending on the container. They pop out of the silicone mold so easily and look very nice.
These are best stored in the fridge or freezer (my preference)
