The warm gooey spoonful of oatmeal mixed with blueberries and other yummy ingredients just makes this recipe so delicious and filling, but it’s even better when you can make it in your Instant Pot (or in my case, a Power Cooker).
*update* (as of November 2018 I have owned an Instant Pot)
Power Cooker vs Instant Pot
I’ve had my Power Cooker for 3 years and I love it. There are pros and cons to both the Power Cooker and the Instant Pot. Here is more information on what I have (Power Cooker) and the Instant Pot. Both are great kitchen appliances to have in your home.
Instant Pot Low Carb Sweetened Condensed Milk
Recently I made my Clean and Healthy Sweetened Condensed Milk in my Power Cooker. Let me tell you, it was amazing, and the best part of all is I didn’t have to stand there stirring or even keep an eye on my pot to make sure it wouldn’t boil over and make a big mess!! That has never happened to me and I don’t ever want it to.
I have used my Power Cooker mostly for steaming vegetables. It gets the job done in no time with no hassle at all. I also have made whole meals like chicken and vegetables, soup and even oatmeal. There are so many options for meals in an Instant Pot.
Convenient Breakfast
Now for this recipe…instant pot blueberry breakfast oatmeal is a nice change from the normal eggs and bacon breakfast. It’s also an E meal so, like I’ve been saying, I need to get more E meals in and this way is quick and helpful. It is so nice to just add ingredients to a pint size jar, cover the top with a piece of foil and place in the pot filled with 1.5 cups of water. So easy!
Set & Forget
I set it manually for 6 minutes and let the pressure release naturally. Voila…you have cooked oatmeal in a jar! Take the jars out using an oven mitt and place on your counter to cool for a few minutes. When cool enough to touch, stir everything together and enjoy! If needed you can add a little more unsweetened almond milk.

Ingredients
- 1/3 cup old fashioned oats
- 1/3 cup unsweetened almond milk
- 1/3 cup fat free Greek yogurt
- 1/3 cup blueberries, fresh or frozen
- 1 Tablespoon chia seeds
- sweetener to taste (I used 1/2 teaspoon THM Super Sweet )
- splash of vanilla
- pinch of mineral salt
- sprinkle of cinnamon, optional
- 1-1/2 cups of water for the pot
Instructions
- Pour water in your empty pot and set aside.
- Using a pint size jar, pour in all ingredients in the order given.
- Cover top of jar with a piece of aluminum foil and place in the pot.
- Set manually for 6 minutes.
- Allow your instant pot to release pressure naturally.
- Using a pot holder or oven mitt , carefully take out jar and set it on the counter to cool for a few minutes.
- Once cool enough to touch, stir oatmeal and enjoy!
Notes
-This makes one serving, however you could easily make 2-3 more jars up, depending on how many will fit nicely in your pot.
-You could use other berries if you wish. I happen to like blueberry oatmeal 🙂
-The cook time does not count the time it takes for pressure to build up or release.
