What Is Custard?
According to Collins dictionary, custard is a baked dessert made of milk, eggs, and sugar.
Custard comes in a variety of flavors, but pumpkin seems fitting this time of the year.
Pumpkin Custard Is Sugar Free
Since the main ingredients in a custard are milk, sugar and eggs, we need to make a few changes to make this recipe Trim Healthy Mama-friendly!
Using a low carb sweetener, such as Swerve or Monkfruit, can take the place of white sugar in this recipe.
Can I Make Dairy Free Custard?
To make this recipe dairy free, simply switch out the heavy cream and use coconut cream.
You could also take a can of coconut milk and put it in your fridge overnight.
Then just scoop out the hardened cream from the can.
Should I Use Canned Or Fresh Pumpkin Puree For This Custard Recipe?
Either one will be fine.
I have fresh pumpkin puree in my freezer, but chose to use canned pumpkin this time!
What Can I Do With Leftover Canned Pumpkin?
You can freeze leftover pumpkin puree in Tablespoon portions using an ice cube tray.
Several pumpkin spice latte recipes or smoothies call for a couple Tablespoons of pumpkin, so this works perfectly!
Will My Non-THM Friends Like Pumpkin Custard?
If your friends love pumpkin, then yes, they will fall in love with this custard.
It is rich, creamy and super decadent!
This recipe makes about 4 servings, but it is so rich, you may be able to get more servings out of it.

Ingredients
- 1 cup heavy cream (or coconut cream for dairy-free version)
- 1 cup pumpkin puree
- 2 teaspoons pumpkin pie spice
- 4 egg yolks
- 3 Tablespoons Swerve powdered sweetener
- 1/4 teaspoon xanthan gum
Instructions
- Mix all ingredients in a blender until smooth.
- Pour mixture into saucepan over low heat.
- Stir for 4-5 minutes. It will thicken more.
- Cool and pour into custard cups or one big container.
- Refrigerate for a couple hours before serving.
