What Exactly Is A Pumpkin Spice Truffle?
Typically a truffle has some sort of chocolate involved, but this recipe is different!
There is no chocolate, yet it is still going to be called a truffle!
Pumpkin spice can be used year round, but there’s always something special about those flavors in the Fall season.
So truffles made with a pleasantly light pumpkin spice flavor were created in my kitchen!

If your only issue with dairy is the lactose, then you should be able to use the THM protein powders, as they do not contain lactose.

How Should I Store These Pumpkin Truffles?
These little protein bites can be stored in an airtight container in the refrigerator for up to a week.
The entire recipe makes around 7 average size truffles, so you could definitely double or triple the recipe to have more!

Pumpkin Spice Truffles (THM-FP)
Pumpkin spice truffles are a great little protein snack! Whether it's the middle of the afternoon or after supper, these low carb treats will satisfy your sweet cravings...plus give an extra boost of protein.
Ingredients
- 7 Tablespoons THM Pristine Whey Protein Powder
- 2 Tablespoons pumpkin puree
- 3/4-1 teaspoon pumpkin pie spice (depending on how much spice you like)
- pinch of mineral salt
- splash of vanilla extract
- 1 Tablespoon THM Gentle Sweet
- 2 Tablespoons natural almond butter
Instructions
- Mix all ingredients together and form into balls.
- Keep in fridge to firm up a bit, or eat right from the bowl!
Notes
Taste as you make these truffles. If it needs more sweetener, add it to your liking.
Rolling each ball in a mixture of cinnamon/granulated sweetener is totally optional, but makes them all the tastier!
