What Are Rice Crispy Bites Made Of?
The main ingredients in these delicious candies are peanut butter and brown rice puff cereal.
The natural peanut butter and puff cereal mixed together give you a creamy/crispy texture with every bite.
Here’s what you’ll need to make these no bake treats:
- natural peanut butter (only ingredients should be peanuts and salt)
- butter
- brown rice puff cereal
- THM Gentle Sweet or your favorite powdered sweetener
- sugar free chocolate chips (I used Lily’s semisweet)
- coconut oil

Are Rice Crispy Bites Low Carb?

These treats are going to be considered an S (or low carb) for the Trim Healthy Mama…let me explain.
This recipe is a bit unusual when it comes to what fuel setting it belongs in.
If you follow the Trim Healthy Mama lifestyle, you probably know that the brown rice puff cereal is an E and the rest of these ingredients are an S.
You would think Crossover right away, right? But wait…there is more!
Because this recipe makes many servings, I was able to squeeze the puffed brown rice cereal into an S setting even though each treat contains a small amount of carb fuel.
You can decide for yourself to follow Trim Healthy Mama in your own unique way if you feel comfortable outside the usual fuel parameters.
The short answer is that there is a definite combination of E fuels and S fuels in the recipe, but it is still outside of the typical fuel styles that we’re used to separating with THM.
If you went by the numbers, there are very few net carbs in each crispy bite. I would personally choose to have 1-2 treats in a dessert setting. They are rich anyhow, so you don’t need too much!
You can make your own decision how to proceed…but just to be clear, this dessert is an S if you stick to just a couple treats.

How Many Rice Crispy Bites Does This Recipe Make?
You might cut your treats smaller or larger than the next person, but because they are supposed to be bite-size treats, I cut mine pretty small.
I was able to get around 34 pieces from an 8×8 baking pan.
Having that many pieces would make each treat an S (having 8 grams of fat per treat), but the net carbs in each treat would be less than 2, so you can technically have a few treats as an S, even with the carb fuel.
Again, only do what you and your body are comfortable doing.

Do These Bites Stay Crispy?
You will find that they are not going to be like your average Rice Krispy treats (the ones with marshmallows).
Yet, I was happily surprised that they do have a crispy texture to them, even after being in the refrigerator overnight.
I would say they could even be frozen in small batches to have on hand for future dessert/treats.

How To Store Rice Crispy Bites
Theses treats are definitely best stored in an airtight container in the refrigerator.
Because of the coconut oil in the chocolate, it will soften fairly quickly if left out on the counter.

Rice Crispy Bites

Ingredients
- 1 cup natural creamy peanut butter
- 1/2 cup butter, softened
- 2 cups brown rice puff cereal
- 5 Tablespoons THM Gentle Sweet or 3/4 cup powdered sweetener that measures like sugar (Monkfruit, Swerve, etc)
- 1 cup sugar free chocolate chips (Lily's, Bake Believe, etc)
- 1 Tablespoon coconut oil
Instructions
- Stir peanut butter, butter, cereal and sweetener together until combined.
- In parchment lined 8x8 dish, scoop mixture evenly in.
- Refrigerate for atleast an hour.
- Melt chocolate chips and coconut oil in microwave or stovetop and pour over peanut butter mixture.
- Refrigerate until chocolate is hardened.
