If you’re like me, when it comes to preparing the supper meal,  two words that come to mind are SIMPLE and QUICK!!  I’ve come to realize that if I’m going to have a presentable THM meal for my family, there has to be time and preparation involved…this is where my slow cooker comes in handy!




I have many kitchen gadgets and appliances, but one of my favorites is my crockpot.  My very favorite kitchen “machine” is my Blendtec blender!  I can’t even describe how much I love it.  My husband bought it for me 3 years ago this Christmas and I tell him often that it has been my favorite gift ever!!  I should tell you about how he gave it to me sometime…but that’s another story for another day!! 🙂

I’ve had this particular crockpot for almost 11 years (wedding gift) and it still works like a charm!  It takes  no time at all to throw in some chicken or beef or whatever you’re going to eat, turn it on and let ‘er work for the rest of the day!




Curry was always one of those spices I was kinda scared to use…all I knew about curry was that it is an Indian spice.  I never realized it had so many health benefits: protection against heart disease, prevention of cancer, reducing Alzheimer’s disease symptoms and so much more.  To learn more about the benefits of curry click here.

So I finally got brave a few years ago and tried a vegetable curry soup, and you know what!!  I fell in love with the flavor!




Recently I was hungry for curry chicken and decided to just make it up as I went.  I think it turned out beautiful!  My husband and boys loved it!  I was a happy mama!

Now if you are someone who is a little nervous to try curry spice, just do it!  I bet you won’t regret it!

Slow Cooker Sweet Curry Chicken

A warm saucy chicken with flavors of curry is a nice meal for a busy day!

  1. Place chicken on bottom of crockpot.
  2. Add broth, cilantro, curry powder, salt and sweetener. Give a stir.
  3. Cook on low for 6-7 hours or on high for 4-5 hours.
  4. About 30 minutes before eating, add cream cheese and heavy cream.
  5. Allow cream cheese to melt then slowly sprinkle glucomannan in while stirring.
  6. Broth will thicken a bit, but if you want it thicker, add a tiny bit more "glucci".
  7. Serve with steamed mixed veggies. The sauce is great on the veggies!
