If you’ve never had shredded sweet potatoes with your eggs, you may be missing out on a new favorite meal.
It’s been a while since I started shredding sweet potatoes to eat with my eggs at breakfast.
You would not believe how filling this meal is!

Are Sweet Potatoes an E or S?
If you follow the Trim Healthy Mama plan, you know that sweet potatoes are an E.
Having sweet potato hash browns with whole eggs will be a Crossover, but like I said, still on plan.
I actually crave a crossover breakfast once in a while. It’s delicious with the cooked egg yolks mixed with the sweet potatoes.
If you make egg whites to eat with your sweet potato hash browns, you will stay in the E setting.

What Ingredients Are In Sweet Potato Breakfast Casserole?
The main ingredients in any breakfast casserole dish are normally eggs, some sort of meat, cheese and sometimes crescent bread for the crust.
The sweet potato hash browns in this recipe will be filling enough to take the place of bread.
With the mixture of egg whites, lean turkey sausage, a few spices and of course, the sweet potatoes, you have yourself a hearty breakfast that everyone will love!

Can I Make This Casserole In A Muffin Tin?
When I was testing this recipe, I actually made it in muffin cups using a muffin pan.
I thought it would be a nice little, hand-held breakfast muffin…plus it was portion-controlled.
Well, as delicious as it turned out, it failed the muffin tin test.
Oh, you could still make this recipe in muffin cups, but you would have to eat it with fork.
It would fall apart too easily if eating it by hand.

Breakfast Casserole Can Be Made Ahead Of Time
To save some time on the day of eating this casserole, go ahead and prepare it a day ahead of time.
Prepare everything in your casserole dish, cover and place in the refrigerator.
Just take it out of the fridge about 30 minutes before baking it, so the cold dish doesn’t come in contact with a hot oven. We don’t want any glass cracking!
How Can I Have Cheese In An E Meal?
Shredded cheddar cheese has around 9 grams of fat in 1/4 cup.
By only using 1/4 cup of cheese, you would still have less than 5 grams of fat per serving…and that’s if you’re serving 6 big squares from the entire dish.

Sweet Potato Breakfast Casserole
An energizing breakfast that will start your day with great protein, good carbs and delicious flavors! A family favorite for sure!
Ingredients
- 4 cups shredded sweet potatoes, uncooked
- 3/4 cup egg whites
- 3/4 teaspoon mineral salt
- 1/4 teaspoon pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 cup turkey breakfast sausage recipe, cooked & crumbled
- 1/4 cup shredded cheddar cheese
Instructions
- Preheat oven to 325 degrees.
- Place shredded sweet potatoes in large bowl.
- Add egg whites, salt, pepper, onion powder and garlic powder. Mix.
- In 9x13 greased pan, pour in the sweet potato mixture and spread evenly.
- Sprinkle turkey breakfast sausage crumbles on top of sweet potato mixture.
- Sprinkle with shredded cheese.
- Bake for 25-30 minutes or until center of casserole is done.
